The finished water is laboratory tested.

After commissioning, a sample of the finished water is sent for laboratory analysis. We then identify its drinking character within the Izumi V.S.O. Water Spectrum, from soft and light through smooth and balanced to fuller-bodied and mineral, and compare it with recognised waters from around the world.

Laboratory testing identifies the drinking character of the water your venue actually serves. It is not selected in advance.

02SampleA sample of the finished water is drawn from the tap as it will be served.
03AnalyseHardness, total dissolved solids and pH are measured under laboratory conditions.
04IdentifyThe results identify the finished water’s drinking character within the V.S.O. Water Spectrum and allow it to be compared with the three expected V.S.O. ranges.

Inspired by the snow-fed landscape of Mount Yotei, this is the softest and lightest of the three V.S.O. ranges. It has minimal perceived mineral weight and a quiet, almost weightless finish.

Its delicate character is especially well suited to fine food, wine-led dining and customers who prefer water that refreshes without intruding.

What the numbers mean.

Hardness — affects feel

Hardness comes mainly from calcium and magnesium. Harder water tends to feel fuller and drier. Softer water feels lighter and gentler.

Minerals — affect taste

Mineral content influences how much flavour the water carries. More minerals usually create a more noticeable taste; fewer minerals create a cleaner, quieter profile.

pH — affects softness and bite

Lower pH tends to taste brighter and sharper. Higher pH generally feels softer. Carbonation lowers pH, which is why sparkling water can have more bite than still water.
